Hummus with Tasty Hidden Medicinals

 

Homemade hummus with tasty hidden medicinals is a perfect way to eat lots of nutrients in one bite.  And, a great way to serve veggies such as cucumbers, celery, radishes or carrots as ‘dip sticks!’

This recipe uses liver supportive milk thistle*, digestive supportive fenugreek* and mint, and anti-inflammatory turmeric* for an added set of yummy tastes AND good medicine….all in one!

Hummus with Tasty Hidden Medicinals

Ingredients

  • 1 quart organic dried garbanzo beans
  • 1 1/2 cup organic, stone crushed extra virgin olive oil (EVOO)
  • 1 cup fresh tahini
  • 1/4 cup fresh lemon juice
  • fresh mint, to taste
  • fresh rosemary, to taste
  • sea salt and black pepper, to taste
  • 2 tbs. finely ground milk thistle (I grind in a coffee grinder I use for spices.)
  • 2 tbs. turmeric powder
  • 1 tsp. chili peppers (if you like it hot!)
  • 1 tsp. finely ground fenugreek

Instructions

  1. Soak garbanzo beans for at least 24 hours, with a pinch of sea salt. Change soak water 1 time each 24 hour period. Sometimes I will let my garbanzo beans soak for 2-3 days! If they beans begin to smell fermented, do not be alarmed! Simply pour out the soaking water and rinse them in fresh water.
  2. Cook garbanzo beans at a low simmer for about 1 1/2 hours. They will get very mushy! If any foam rises to the top, skim this off with a spoon and rinse down the sink.
  3. Drain garbanzos and let cool.
  4. Once cooled, put beans in food processor with EVOO, tahini, lemon juice and spices. Put a small amount of EVOO, tahini, lemon juice and spices in with each batch of beans to get a good mix of ingredients. Blend well.
  5. At times I like more EVOO or tahini, or I want a more spicy hummus and add more chili pepper or black pepper. It’s up to you! Play with your ingredients so that the hummus, or any recipe, fits YOUR style!
  6. Serve with a nice pour of EVOO and lemon slices, fresh mint and parsley sprinkled on top, and plenty of cut veggies!
